Stir-fry, soy sauce. Method first, then the seasoning that defines it — one of the rare names whose middle slot is a sauce rather than a solid ingredient.
ซีอิ๊ว is itself a word Thai took from Chinese, along with the shophouse kitchen this dish comes out of, but it is fully naturalised and the hub teaches it as ordinary menu vocabulary. The name does not mention the wide noodles (เส้นใหญ่), the egg, or the คะน้า Chinese broccoli, all of which arrive anyway — and the smoky wok edge that decides whether a plate is good, กลิ่นกระทะ, is never on the board.
