Mango sticky rice (khâao-nǐao-má-mûang)

ข้าวเหนียวมะม่วง

The name, part by part — it reads straight through

มะม่วงmá-mûangmango

Rice, sticky, mango — the whole plate, in order, with nothing hidden. What the name leaves out is the salted coconut cream, which is the part that makes it work.

ข้าวเหนียว is the everyday word for sticky rice and belongs to the northeast and north as an ordinary staple; here it turns up in a sweet. Note that a Thai sweet is built to be cut with salt rather than left sweet, so the coconut cream the name never mentions is salted — and the mango variety matters, the น้ำดอกไม้ ones peaking in hot season.

How Thai dish names are built, in full: Thai food, dish by dish.

Ripe yellow mango with sticky rice soaked in salted coconut cream, more cream spooned over, crispy mung beans on top. Season-dependent: at its best in hot season (March to June) when นำ้ดอกไม้ mangoes peak.

Spice none Dessert. The only heat is the price in tourist zones.

What is in it Ripe mango (นำ้ดอกไม้ variety ideally), glutinous rice steamed then steeped in coconut cream with sugar and salt, a salted cream topping, toasted mung beans.

Vegetarian and allergies Fully vegetarian and gluten-free by nature.

Say it at every level

A1.1 Order it

ข้าวเหนียวมะม่วงครับ (khâao-nǐao-má-mûang khráp). Point at the ripest mango; the vendor approves.

A2 Make it yours

Seasonal talk is built in: หน้ามะม่วงหรือยัง (is it mango season yet?). Extra cream: ราดกะทิเยอะๆ. Ripeness words: สุก (sùk, ripe), งอม (ngawm, dead ripe).

B1 Talk about it

The balance argument Thais actually have: the rice must be เค็มนิดๆ (slightly salty) to earn the mango; all-sweet versions are tourist versions, and saying so, ต้องเค็มตัดหวาน (the salt must cut the sweet), is a real position.

C1 to native Own it

ตัดหวาน / ตัดเลี่ยน, "cutting" sweetness or richness, is the master concept of Thai dessert design, and it transfers to speech: someone's sarcasm can ตัดหวาน a saccharine meeting. Also the Rainism moment: when Lisa of Blackpink ate it on camera, national mango sales moved. That is the cultural weight this plate carries.
